Raw vegies with a hot thai sauce dip
The great thing about this dish
is that its simple enough to prepare quickly and easily. But you have to make the thai
sauce yourself which makes it novel enough to present at a dinner party as a talking
point!
Ingredients
Sticks of celery, carrot and cucumber
cauliflower and/or broccoli florets blanched, sliced long or French beans
sprigs of fresh herbs (basil, mint, coriander)
Thai Hot Sauce
1/2 cup dried shrimp, soaked
1 medium onion, chopped
6-8 cloves garlic, crushed
2 tablespoons of fresh and chopped coriander (including roots and stems) 2-5 fresh red
chilies, seeded and chopped
Fish sauce
Lime or Lemon juice
Sugar
Wash the vegetables and arrange decoratively on a tray covered with
crushed ice. Garnish with the herbs and refrigerate until ready to serve. Drain the
shrimps and grind to a paste with the onion,garlic, coriander and chilies. Add enough fish
sauce to make the quantity of dipping sauce you need, lime or lemon juice to taste and
sugar. Omit the fresh coriander if it is not liked, or substitute fresh mint. Pour the
sauce into dip dishes and serve with the prepared vegetables.
