Chinese Parsley Chicken (China)

Ingredients
(Serves 4)

2 pieces of chicken breast
2 tablespoons of peanut oil
1 tablespoon of light soy sauce
Hot pepper powder, to taste
1 spring onion (scallion) chopped up
5 slices of shredded ginger
1 1/2 teaspoons of sugar
1 tablespoon of vinegar
1 tablespoon of sesame seed paste
1 1/2 teaspoon of salt
Chinese parsley
1/4 teaspoon of sesame oil

Rub the chicken with 1 teaspoon of the salt and cut it open. Steam it in a steamer for about fifteen minutes or until tender. Remove the chicken to cool. Tear it into long strips. Arrange the chicken on a plate.

Mix the spring onions, ginger, soy sauce, sesame paste vinegar, sugar and the rest of the salt and sesame oil together (lets call this mixture #1)

Heat the peanut oil until very hot and perhaps smoking a little and then remove from the heat. Add the pepper powder, stirring well and then add the ingredients in mixture #1 and mix well. Sprinkle over the chicken and garnish with parsley.
