Oyster Pancakes
(Thailand)
Ingredients
15 fresh oysters
2 cups of water
4 scallions (spring onions)
1 cup ground rice flour
1/2 teaspoon of salt
6 eggs
vegetable oil
Wash the oysters and remove them from their shells. Rinse them in salty water and drain
them. Make a thin batter with the water, salt and rice flour. Heat a wok or frying pan
(whichever you prefer) and pour in a a little oil. When its very hot, stir the bvatter and
pour in about one -quarter of it in a criss-cross pattern across the pan or wok. Pop some
more oil in and add about one-quarter of the oysters and one-quarter of the scallions and
spread them across the pancake. Break an egg on top and spread it over to seal. Mould the
pancake into a square shape and serve carnishing with spring onions.
