Stir-fry Beef in Oyster Sauce

Ingredients
(Serves 4-6)

1lb/450g rump steak
2 tablespoons of soy sauce
1 tablespoon of chopped root ginger
3 tablespoons of vegetable oil
1 tablespoon of cornflour
1 tablespoon of chopped garlic
225g/8oz of mixed mushrooms (straw, oyster and/or shiitake)
2 red chilies, cut into strips to garnish
1 teaspoon of sugar
2 tablespoons of oyster sauce
4 spring onions, cut into short lengths Ground pepper or peppercorn

Slice the beef on the diagonal into long thin strips. Mix together with soy sauce and cornflour in a bowl, stir in the beef and leave to marinate for at least 2 hours. Heat half the oil in a wok or frying pan. Add the garlic and ginger and fry until fragrant. Stir in the beef. Stir to separate the strips, let them color and cook for about 2 minutes. Remove from the pan and set them aside.

Heat the remaining oil in the wok. Add the mushrooms and cook until tender. Mix in the beef with the mushrooms and add the oyster sauce ground pepper and sugar. Mix it. Add the spring onions and serve garnished with red chili.
