Stir fried Chicken
Ingredients
5-6 chicken breasts
2 tablespoon of peanut oil
salt and pepper
1 clove of chopped garlic
1 chopped spring onion (scallion)
2 Chinese black mushrooms
1/2 cup shredded Chinese cabbage
1/2 teaspoon of cornstarch
1 teaspoon light soy sauce
two pinches of salt
Slice the chicken breast into pieces and mix with the cornstarch and
salt and pepper. For about fifteen minutes soak the black mushrooms in hot water. Drain
and save the water and cut each one into about five pieces. Mix the salt and with some
water.
Heat the peanut oil to smoking and add the chicken, cornstarch and
pepper and salt. Stir Fry for a few minutes and then remove the contents from the dish.
Pour excess oil back into frying pan. Stir fry the garlic and spring onions for a about 15
seconds and then add the mushrooms, cabbage, salt and soy mixing well for a few minutes.
Return the chicken to the mixture and continue to stir fry.
Again, serve in large bowl to enhance the visual impact of the meal.
