Broccoli wrapped-in-paper
Ingredients
(Serves 4-6 Prep time: 50 minutes)
18 broccoli florets about 1 1/2inches across
1 teaspoon of salt
Marinade
2 minced garlic cloves
1/2 teaspoon ginger juice
2 tablespoons light soy sauce
1 tablespoon rice wine of dry sherry
1 tablespoon sugar or honey
18 Six inch squares was or parchment paper or phyllo
4 cups of peanut oil
Bring several quarts of water to boil; add the broccoli and salt. As soon as the water
returns to a boil, drain the broccoli and rinse in cold water. Drain the broccoli again.
In a mixing bowl, combine the ingredients for the marinade, stirring to dissolve the
sugar. Add the broccoli,toss to coast, and set aside for twenty minute.
When the broccoli has marinated, set one floret on each square of paper
and spoon a little of the marinade over it. Fold the paper as you would an envelope and
tuck in the flap to make a neat package.
Heat the peanut oil to around 350 or 375 degrees in a deep fryer. Add
the wrapped broccoli a few pieces at a time (this is a delicate operation so take care)
and fry for around two minutes. Remove them with a slotted spoon and drain on paper
towels. Allow the oil to reheat between batches and continue to fry the remaining pieces.
Serve immediately, still wrapped in paper. |
